RECIPE: PASTA WITH ‘CIME DI RAPA’ & SAUSAGE

“Pasta (orecchiette) with turnip greens & sausage”

“Orecchiette alle cime di rapa & salsiccia”

Ingredients: (for 2 persons)

150 gr. pasta (orecchiette)

200 gr. turnip greens

100 gr. sausage

1/2 glass of white wine

salt, pepper

olive oil ‘extra vergine’

How to prepare?:

Cut the sausage into small pieces as well as the turnip greens. Heat a bit of olive oil in a skillet over moderate heat. Add the sausage (pieces) & turnip greens. After 5 minutes add the wine and leave it for another 15 minutes over moderate heat.

Meanwhile, bring a large pot of water to boil. Once the water boils you add some salt. Then add the pasta and cook it for 9 minutes (always 2 minutes less than instructions tells you!!).

Drain the pasta, add to the skillet for 2 more minutes while adding some pepper. Mix well and serve…

  1. Looks delicious. And coincidentally I am making the same pasta (I found at Trader Joes) with roasted brussel sprouts and garlic tonight. It also calls for white wine and a bit of cream. I enjoy your blog and told a friend who is visiting Italy and France to check it out.
