This recipe is extremely simple, very healthy and still delicious…

Ingredients: (for 2 persons)

  • 2 Salmon fillets
  • Mixed salad
  • Cherry tomatoes
  • 1 Mozzarella
  • Pine nuts
  • salt, pepper
  • olive oil ‘extra vergine’

How to prepare:

  1. Wash the mixed salad and cut the cherry tomatoes in half. Then, cut the mozzarella into small dices and put everything in a large bowl.
  2. Toast the pine nuts over low heat but make sure you don’t get them burned! Add it to the bowl and drizzle with oil and balsamic vinegar. Mix it well.
  3. Heat a bit of oil in a skillet over high heat. Place the salmon fillets, skin-side down in the skillet and cook for 5 minutes (or to desired doneness). Do not overcook!

I know it’s nothing special, but I do think a delicious dish can be as easy as this one!
