” SALMONE & INSALATA”
This recipe is extremely simple, very healthy and still delicious…
Ingredients: (for 2 persons)
- 2 Salmon fillets
- Mixed salad
- Cherry tomatoes
- 1 Mozzarella
- Pine nuts
- salt, pepper
- olive oil ‘extra vergine’
How to prepare:
- Wash the mixed salad and cut the cherry tomatoes in half. Then, cut the mozzarella into small dices and put everything in a large bowl.
- Toast the pine nuts over low heat but make sure you don’t get them burned! Add it to the bowl and drizzle with oil and balsamic vinegar. Mix it well.
- Heat a bit of oil in a skillet over high heat. Place the salmon fillets, skin-side down in the skillet and cook for 5 minutes (or to desired doneness). Do not overcook!
I know it’s nothing special, but I do think a delicious dish can be as easy as this one!
