The Netherlands is not very famous for their cuisine we all know that. Italy however all the more! Still, there are some things I used to eat in The Netherlands that I miss. One of these things is a bagel with cream cheese and smoked salmon. Unfortunately here in Italy it’s not so easy to find bagels let alone a bagel with my favourite toppings. So I got the idea to turn this dish into an Italian one: “Bruschetta with ricotta (special) and smoked salmon”. And boy, this just turned out to be my new favourite bruschetta! I prepared it for lunch, but you can also prepare it for a starter, just cutting the bruschetta into smaller pieces.
- Bread slices
- Ricotta cheese
- Chopped chives
- Smoked salmon
- garlic cloves
- pepper, salt
- olive oil extra vergine
How to prepare:
1. Mix the ricotta cheese with the chopped chives. Add a bit of salt and pepper and jut a little bit of olive oil. Mix until it becomes very creamy.
2. Grill the slices of bread. You can do this in the oven, but I prefer the grill pan. It’s easy and fast. Then, rub the garlic glove over the warm bread.
3. Spread the ricotta mix on the bread slices and place the smoked salmon on top of it. Done…lunch is ready!
