QUICK & EASY EGGPLANT BRUSCHETTA

I ♥ Italian cuisine…in general!! But obviously I have a few favorite dishes. One of them is bruschetta. You can make them in so many ways. Actually you can make them with anything you like. The classic ones with only a bit of olive oil or tomatoes and basil. Sooooo good!! But I also like bruschetta a lot with tuna, pepperoni or eggplant! Eggplant Bruschetta is quite new to me. I made it a few weeks ago for the first time and I love it!! It’s such a perfect lunch dish or antipasto!! Light, healthy and made in no-time! You can eat it in any season but I find it an excellent dish for sunny days. Enjoy this Quick & Easy Eggplant Bruschetta!!

Ingredients:

  • 1 small eggplant
  • handful of parsley
  • 1 clove of garlic
  • bread slices (I used ciabatta bread)
  • olive oil extra vergine

Preparation:

  1. Cut the eggplant in small slices and grill them in a grill pan.
  2. Cut the ciabatta bread into slices and grill them in a grill pan.
  3. Rub the garlic clove over the warm bread slices.
  4. Put some grilled eggplant slices on top of the bread slices.
  5. Mix finely chopped parsley with a bit of olive oil and pour a little bit over the eggplant slices.

    1. Hi, no… no trouble at all! I just grill them for a few minutes each side until you see the golden brown stripes. Then I put them on a paper towel and that’s enough. It’s important to cut them in thin slices… Good luck with the next time grilling them 😉

  1. I was just commenting on another blog that I have kind of a love hate relationship with eggplant. I love it but sometimes the outer shell is just plain wrong… Not sure why as it almost seems to be related to the specific specimen and not to how you treat it. This looks fabulous though. Bruschetta is definitely one of my favorites!

    1. Hi Simone, I know a lot of people having trouble with eggplant… I either grill it or cut into small pieces and use it for vegetable pasta sauce. Either way it doesn’t create me any problem, so I stick to these 2 options…I want to stay in a love relationship with my eggplant 😉
