This cold Asparagus Farro Salad is perfect for the warm sunny days… I have told you before that I got to know farro since I live in Italy and I’m a huge fan. Even though it’s delicious in a soup I seem to almost always use it for a cold salad. I guess I like it best this way…
As it’s still asparagus season, we eat lots of asparagus this period. A few weeks ago I needed to finish the asparagus I had left in my fridge so I thought a simple salad with farro and cherry tomatoes would do. Both me and my love were sold. A fresh and very easy to prepare salad. I love those salads best…don’t you?

Ingredients (for 2 persons):

  • 150 gr. farro
  • 10 cherry tomatoes
  • 300 gr. asparagus
  • salt
  • olive oil extra vergine


  1. Bring a large pan of water to boil.
  2. Once it boils add some salt and add the farro
  3. Leave it boiling for 15 minutes.
  4. Drain the farro.
  5. Meanwhile bring another pan of water to boil.
  6. Cut the asparagus into small pieces and wash it.
  7. Once the water boils add some salt and add the asparagus.
  8. Leave it boiling for 15 minutes.
  9. Cut the cherry tomatoes in 4 pieces each.
  10. Put the farro, asparagus and cherry tomatoes together in a boil and add a bit of olive oil.
