Who doesn’t love a 3 ingredient recipe?? I adore simple and tasteful recipes. Normally it doesn’t even take you too long to prepare those recipes. Perfect when you don’t have hours to spend in the kitchen. A few days ago I shared the cold Apsaragus Farro Salad, with only 3 ingredients as well. Today an appetizer with again only 3 ingredients: Eggplant, Ricotta and Chives. Together they make the delicious Ricotta Eggplant Rolls. Especially the combination of the fresh ricotta cheese with chives is one of my favourites. You can use it to stuff so many things!! This time I used it to spread on some grilled eggplant slices to make these cute little Ricotta Eggplant Rolls! A simple Italian appetizer…
- 1 eggplant
- 250 gr. ricotta cheese
- Cut the eggplant in small slices and grill them in a grill pan.
- Chop the chives and mix well with the ricotta cheese.
- Smear the eggplant slice with the ricotta mixture and make a roll.
