TASTY RICOTTA EGGPLANT ROLLS

Who doesn’t love a 3 ingredient recipe?? I adore simple and tasteful recipes. Normally it doesn’t even take you too long to prepare those recipes. Perfect when you don’t have hours to spend in the kitchen. A few days ago I shared the cold Apsaragus Farro Salad, with only 3 ingredients as well. Today an appetizer with again only 3 ingredients: Eggplant, Ricotta and Chives. Together they make the delicious Ricotta Eggplant Rolls.Β Especially the combination of the fresh ricotta cheese with chives is one of my favourites. You can use it to stuff so many things!! This time I used it to spread on some grilled eggplant slices to make these cute little Ricotta Eggplant Rolls!Β A simple Italian appetizer…

Ingredients:

  • 1 eggplant
  • 250 gr. ricotta cheese
  • chives

Preparation:

  1. Cut the eggplant in small slices and grill them in a grill pan.
  2. Chop the chives and mix well with the ricotta cheese.
  3. Smear the eggplant slice with the ricotta mixture andΒ make a roll.

Is this easy or what?? And it such a tasteful dish…trust me. A perfect appetizer when with friends and you want to create the Italian vibe!!

  1. Like Sinfully Tempting, at first I thought these were cannolis and then I realized they were eggplant, which made me even happier since I prefer savory things! They look absolutely delicious! πŸ™‚

    1. Ciao Serena, thanks so much for stopping by! I guess I fooled many but at least these can be eaten without any sense of guilt ;). On the other hand….these are so good that I’ve eaten way more of these little treats than I would have done with cannoli πŸ˜€
