Today it was time  for the annual (non competitive!!) swimming contest at the Lake Maggiore. I participate for a few years now and still love it. With almost 800 persons we get in the lake in Angera and we come out in Arona after 1.2km. Not to win a medal or any other price, just for fun!
Unfortunately there was no sun today and it even started to rain a bit but strangely it wasn’t cold at all. Thank god, because swimming across a lake in the cold is no fun at all. This time also my mom participated so we had some water fun for two!
And we did it…31 minutes to reach the shore. With a great feeling of satisfaction and pride and that’s more important than any price, isn’t it?!

Every now and then I get the question how it is possible to write a foodblog and remaining slim. Ok I would like to lose 2 kilo but failing big time, but is it really necessary? No, it’s more my feeling and ‘frustration’ that after my thirties it’s really easy to gain weight and way more difficult than I’m used to get rid of it. So, how to stay fit and keep your weight stable when cooking, photographing and obviously eating all those delicious dishes. Throwing away food is a no go for me. I absolutely hate that. I guess 3 months of volunteer work in Ghana helped here. It means that everything I prepare is going to be eaten or given away. The last especially when it comes to cakes/desserts. But ok I digress…
I’m not a diet type of girl. I just believe in a healthy lifestyle: healthy and varied food with once in a while some ‘guilty pleasure’ and enough exercise. And no, you won’t find me in the gym either…don’t like the gym. I run once a week, I have a jump rope, a hula hoop and I would like to start swimming again. I sport twice a week max, I don’t have the time for more nor do I want to. Oh and I cycle 20 minutes every day (obligatory) from the train station to work and vice versa. This is what works for me and how I stay fit. And it makes sure I can eat what I want to. Obviously I make sure I eat lot’s of fruits and vegetables as well on a daily base. It’s all about finding the right balance if you ask me. The right balance between healthy food, less healthy food, guilty pleasures and exercise.

So after my swimming adventure today it’s time for this delicious grandma’s cake or La torta della Nonna. This cake is very known here in Italy and with it’s sand pie crust, cream filling and pine nuts on top it’s a delicious cake!! Yummyyyyy…

* 200 gr. all purpose flour (00-type)
* 80 gr. caster sugar
* 80 gr. cold butter (in small dices)
* 1 egg
* 1 tsp baking powder
* zest of  half a lemon (grated)
* pinch of salt
For the cream filling:
* 250 gr. ricotta cheese
* 2 eggs
* 80 gr. white sugar
* 25 gr. cornflour or cornstarch
* lemon zest (1 lemon – grated)
* pinch of salt
* pine nuts
* powdered sugar
* milk

1. Preheat the oven 180ºC.
2. Mix by hand all ingredients for the crust to a smooth dough . Set 1/4 aside in the fridge.
3. Roll out the dough and place it in the buttered springform pan (24cm) to a height of 1cm on the side.
4. Mix all the ingredients for the cream filling and put it in the springform. Straighten with a spoon.
5. Roll out the rest of the dough you’ve set aside in the fridge and place it on top of the cream filling.
6. Put a bit of milk on the top with a brush.
7. Put some pinenuts on top.
8. Place in the oven for 25-30 minutes.
9. Let it cool down completely.
10. Finish with a bit of powdered sugar on top.
