MINI STUFFED PIZZA ROLLS

I, antipasto-lover,  can not but share these mini stuffed pizza rolls. I adapted it from a recipe my colleague gave me and made me enthusiastic immediately. Cute little pizza rolls stuffed with zucchini, peppers and parmesan cheese. Extremely simple, extremely good! So just get in your kitchen and prepare this easy Italian recipe!!

Ingredients:
* 4 zucchini
* 1 big red pepper
* handful grated parmesan cheese
* pizza dough
* salt
* olive oil

Preparation:
1. You can decide to make your own pizza dough (see here the recipe) or you can do it the easy way by buying it
2. Preheat the oven to 200ºC
3. Cut the zucchini in small dices
4. Cut the red pepper in small dices
5. Heat some oil in a skillet and add the zucchini and red pepper and leave it over medium/low heat for 25 minutes
6. Roll the pizza dough into a square of 1cm height
7. Place the zucchini and pepper on the pizza dough and add some grated parmesan cheese on top of it
8. Roll the dough and place it in the fridge for 30 minutes
9. Cut into finger-thick slices, put it on parchment paper and then in the oven for 20 minutes
