I’ve had a very busy week and a lot of train delays this past week, so haven’t been able to blog as you might have noticed. Hooray for the life of a pendular”, but well.. If you finally get home after long working days and stressful train episodes, it’s nice to prepare a tasteful, easy and healthy meal to give you an energy boost when you really don’t want to do anything anymore. You recognize this? Then this is your recipe: Zucchini & Basil Soup. Such a good, definitely healthy and 100% Italian soup that you have ready in no time. What do you say, perfect or perfect? I thought so… 🙂

Zucchini & Basil Soup
* 4 zucchini
* 4 basil leaves
* 1 clove of garlic
* small handful of grated parmesan cheese
* a few pine nuts
* salt

1. Cut the zucchini in smaller pieces
2. Put in a large  stock pot and add 1 lt. of water
3. Add a bit of salt and let it boil for 20 minutes
4. Take a blender and purée the soup
5. Add the basil leaves, garlic (chopped) and parmesan cheese and purée again with the blender
6. Roast some pine nuts and add on top
