Grey sky. Few rain drops are falling down. Autumn has officially began, also here in the North of Italy. Unfortunately… because I prefer Spring and Summer. But the bright sight of Autumn is soups. I love making them and let’s be honest it’s not really a summer dish, is it?! Inspired by the dutch blogger Renske of De Kookster (dutch blog) I decided to make this delicious and autumnish Spicy Corn Soup. It’s the first time I’ve made and eaten corn soup! Really!! Just never thought of making a soup of it. But this one is really good, so if you look outside the window and see a grey sky and some rain drops falling down, light a few candles, turn on some music and serve this awesome Spicy Corn Soup!!
Spicy Corn Soup
- 600 g / 2,5 cups corn
- 1 yellow pepper (cut in small pieces)
- 2 ripe tomatoes (peel removed by holding them in boiling water for a moment)
- 2 green onions (small – cut in small pieces)
- 1 tsp (powdered) cayenne pepper
- 100 g / 1,5 cup bacon bits
- 100 g / 1,5 cup crostini (croutons)
- handful parsley
- 1 stock cube (herb)
- olive oil
Cut the bacon in little strips and fry up in a bit of olive oil until brown and crisp. Remove the bacon and place on paper towel to drain all the excess fat. Set aside. Bring a pan with 1 liter of water to boil and add the corn, pepper, tomatoes, green onions and stock cube. Let it boil for 25 minutes. Then add the parsley and powdered cayenne pepper and puree with a blender until smooth. If necessary use a sieve.
Serve with bacon bits and crostini (croutons)!
TIP: If you’d like your soup more creamy and Italian add a tbsp of mascarpone or gorgonzola!!
