Last weekend I was back home in The Netherlands in Rotterdam! Where I finally got to visit the beautiful “Markthal” (see my FB page for some photos) in the city centre. Absolutely gorgeous, full of delightful food…everywhere you look! Really amazing!! I even got a photo shoot within the Markthal but more about that in January 🙂
I had a fabulous dinner with my girlfriends in the city’s hotspot Level known for their yummy burgers (and YUMMY they are!!) and cocktails! Don’t miss out on it when visiting Rotterdam.
And of course I had time to buy some cookbooks I was longing to buy for some time. One of them is Power Food written by Rens Kroes. Yes, she the sister of the well-known top model Doutzen Kroes, but that doesn’t make her book that good. She absolutely inspires me and many many others to live a healthy lifestyle!! Her first book is awesome: full of gorgeous photo’s and healthy inspiring recipes. I always find it difficult to make sweets/cakes/cookies healthy. But she does that as well and I adore her super healthy chocolate cookies. The original recipe in the book is called Raw Oreo’s but I just made the plain cookies without the filling. Added less raw cacao then she did but for the rest it’s her recipe. And trust me these healthy chocolate cookies are heaven!!!
Healthy Chocolate Cookies (recipe from Rens Kroes – Power Food)
serves 15 chocolate cookies
50 g (1/2 cup) oatmeal
180 g (1 1/4 cup) almonds
100 g (2/3 cup) dates
50 g (1/2 cup) raw cacao
1/2 tsp cinnamon
Soak the dates in water for 15 minutes and remove pits. Put the oatmeal in the blender and blend. Add all other ingredients one by one and blend until combined. Spread the mixture on parchment paper and cut out little rounds. Put them in the fridge for 15 minutes. Enjoy these super healthy chocolate cookies!!
