This new year is starting magnificent! A new blog!!! Well not totally new, the posts are still the same but obviously the name and the look are completely new and I’m so happy with it! I really hope you will do too… And I’m this month’s guest blogger of the Dutch website of the magazine Jamie (of Jamie Oliver!!) I feel so honored to be writing for their amazing site. But it will be all in Dutch, so most of you won’t be able to read it. That’s why I will post the recipes also here on my blog…in English obviously 🙂

To start this series of recipes this month, I decided to share a delicious recipe of Minestrone Soup. The holidays are over (unfortunately!) and January is thé month for a new year’s resolution. I have actually several:
* start swimming again (I started this past Sunday…whoohoo)
* run once a week
* dedicate myself more to healthy desserts (which doesn’t mean I will only post healthy desserts by the way)
* continue starting the day with a glass of warm water with fresh lemon juice
* no unhealthy snacking during the week
That’s it. What’s your New Year’s resolution?

Minestrone soup is a perfect winter dish if you don’t have lot’s of time, but you still want to prepare something healthy and bring a bit of Italy to your kitchen! It’s eaten a lot here during the cold winter days but differently throughout the country. We eat it once a week and I’ll share you my favorite way of preparing Minestrone Soup:

Minestrone Soup
serves 4

1,5 liter // 6 cups of water
2 vegetable stock cubes
120 g // 2/3 cup spelt
120 g // 3/4 cup peas
2 carrots
1 big potato
3 stalks of celery
handful of parsley

Cut the carrots and stalks of celery into small pieces/slices.
Cut the potato in small dices. Bring a large pan with carrots, celery, potato, spelt, peas, water and stock cubes to boil and let it boil for 25 minutes. Add the chopped parsley at the end.

  2. Your blog is looking terrific, Letizia, and so does this soup. I love a thick hearty soup with chunky vegetables in it, this is right up my street.
