In only one month we have planned a marvelous trip to the USA!! I’m so excited! We will be staying at my cousin in LA, but we plan to travel as well. It will be our second time to Cali so this time we want to see other places than our last visit. This time we decided to see Santa Barbara and San Francisco. And then with my cousin we will be visiting Las Vegas and Utah where her dad lives. Our last week we’re planning to spend in LA and surroundings. We hardly can wait…. Once back I’ll definitely dedicate a post to our trip and USA food and during our trip you can stay up to date via the social media (FB, twitter and instagram).
So to get a bit in the “USA-mood” I thought of breakfast American style…pancakes!!!
In the Netherlands we also love to eat pancakes but they’re bigger and thinner than the American pancakes. My love is not exactly fond of pancakes so I made them when he wasn’t at home 😉
I thought of a way to make them healthier than the normal pancakes. That’s why these delights are made of whole wheat spelt flour and added some delicious red fruit in the batter. And yes, these pancakes are heaven!!
Red Fruit Spelt Pancakes
makes 5 pancakes
100 gram // 3/4 cup whole wheat spelt flour
150 ml // 2/3 cup milk
pinch of salt
as much strawberries and raspberries as you like for garnish
With a wooden spoon mix the flour, egg and milk in a bowl. Cut the strawberries and raspberries in little dices and add to the batter. Mix well.
Heat a a teaspoon of coconut oil in a skillet (you can also use butter, it will be just a bit less healthy….). Spoon in ¼ cup batter for each pancake. Spread the batter out a little with the back of a spoon. Cook for about 2 minutes. Flip and cook for another minute or until golden brown. Remove from skillet and repeat with remaining batter.
Add some more red fruit on top and a bit of maple syrup.
