These days have been really sunny and hot here in Italy! Summer is definitely not over yet and I’m enjoying these sunny days to the fullest!! Waking up in the morning with the sun shining makes me feel so happy 😀 Sun really makes all the difference in the world…in a positive way obviously!
And what’s more perfect for lunch than salads when it’s hot outside? It’s light but still filling. Today a new recipe I came up with with grilled eggplant and grilled peach.
I love grilled eggplant in a salad but have never used grilled peach in any recipe to be honest. But the combination of the sweet flavor of the peach with the bitter eggplant and the sour cottage cheese is simply amazing! You get all these flavors in one bite… I’m convinced to use it more often during this season. Today’s recipe is absolutely a winner and one I’ll be making more often. That’s why I wanted it to share it with you as well. I’m curious if you like it as much as I do 🙂
Oh, and of course it’s an easy recipe as well as pregnant/gestational diabetes proof!
Grilled Eggplant & Peach Salad
200 g // 7 oz chicken breast
150 g // 0,3 lb cottage cheese (fiocchi di latte – Hüttenkäse)
sprouts for garnish
Cut the eggplant in thin slices and grill them in a grill pan. Set aside to let it cool down.
Grill the chicken breast in a grill pan and cut into thin strips.
Cut the peaches in small parts and grill them in a grill pan.
Make a layer of the grilled eggplant slices. Spread a bit of cottage cheese on each slice. Add the peaches and chicken breast and garnish with some sprouts on top.
