In front of my parents home is located “La Valle”, a small biological company where they grow and sell (besides various plants) blueberries, raspberries, red currants and strawberries and some other fruits. From these four fruits I mentioned they also make marmalade, juice, jelly and mousse. They even have some without any additional sugar (just the sugar from the fruit itself) which is perfect for me! They are only open from June till September so I went to have a look last week…just in time 😉
I got to have a look where they grow the fruits and she showed me the various marmalades and juices. All biological and really good! And that so close to home…wow!
I got inspired to make a new recipe with the blueberry marmalade without any additional sugar. This recipe I’m sharing today was given to me by a friend and is perfect for a healthy dessert. And the presentation is beautiful if you ask me. Who doesn’t like flowers…or better roses? Exactly! So these Apple Roses are not only delicious but also lovely to serve, don’t you think?
It’s really easy to make as well. So even if you have friends over during a busy working week, you can make these Apple Roses in no time!! Just prepare these bites before you start cooking so it can cool down and you will enjoy all the flavors even better!!
2 red apples
juice of 1 lemon
whole wheat puff pastry ( I used 2 large sheets)
blueberry marmalade (I used sugar free)
Preheat the oven to 180ºC / 350ºF.
Cut the apples in quarters and cut them in very thin slices. Let them boil in water with the juice of 1 lemon. This to prevent the apples slices become brown. Let it boil (slowly) for more or less 10 minutes. Just check if the apple is soft enough to roll without braking.
When ready, take the slices out of the water and let it cool down.
Cut the puff pastry into wide strips of 10 cm. Spread a bit of blueberry marmalade on the puff pastry. Add a bit of cinnamon on top. Then lay the apple slices on it but make sure the curved (red) side is a laying a bit over the side. Now fold the bottom of the puff pastry (so the opposite side of where you put the apple slices) and roll it. Line a muffin pan with pieces of parchment paper or paper liners and place the rolls in it. Let it bake for 25 minutes.
