It has been a busy but great weekend! Yesterday we haven’t been at home the whole day. Visiting my parents and friends for dinner made us come back home late in the evening. For Samuele it has been a bit too much I guess because unfortunately he didn’t sleep that well last night. I was so tired this morning after waking up several times last night. Today we planned to see the carnival in a city close by, but in the end I decided it was too much for our little boy. His schedule was a bit messed up today so I wasn’t even sure when to feed him. With this cold outside and crowded bars the only option would have been in the car. I didn’t think the carnival was worth it 😉 So we had a long walk in the sunny woodland close by home with a friend. Lovely weekend!
But now it’s time for food and this time a vegetarian meal! Not that I’m a vegetarian. Even though I’m not a big meat lover I do eat meat…. and fish! So no, no vegetarian at all. But at least once a week I do eat vegetarian. I made these burgers last week for the first time. Just to try something new, but I liked them that much that I wanted to share it here with you. I think it’s the perfect substitute for a normal hamburger if you don’t want to eat meat. It’s soft but firm and full of taste! And extremely healthy. So just give it a go I’d say!!
400 g // 2 cups chickpeas
100 g // 2/3 cup peas
175 g // 1 cup corn
2 handfuls grated parmesan cheese
100 g // 1 1/8 cup breadcrumbs
handful parsley, finely chopped
1 tsp mustard
olive oil extra vergine
If you use fresh chickpeas make sure you soak them for 8 hours or overnight. Put chickpeas, peas and maid in a blender and blend until smooth. Put it all in a large bowl and add an egg, parmesan cheese, breadcrumbs, mustard, parsley, a pinch of salt and a bit of pepper and mix well by hand.
Heat a bit of olive oil in a large frying pan over a medium heat. Once hot, add the patties and cook for 10 minutes or until golden and cooked through, turning halfway.
I used wholemeal sesame buns and added a slice of tomato and a few slices of grilled eggplant on each bun. Of course you can add anything you like!
