Italian Red Velvet Mini Cakes
Today is the day of love. And my heart is filled with love for my two men, the loves of my life! Even though this day has become more a commercial hype I still find it romantic. I might be just a romantic fool…probably! Anyway I never let Valentine’s day pass by without “celebrating” it. Just a little card or a small present or something sweet to eat. It doesn’t matter. It doesn’t need to be a big thing, just a small act to show your love. Even just some kind words…in the end it’s the thought that counts!
As last year Luca surprised me with some sweet love cookies , this year I made him some really good Italian Red Velvet Mini Cakes. And they are goooooood!!!
So hop in the kitchen and bake some hearts for your love. It’s only morning so you’re still on time!!
Italian Red Velvet Mini Cakes
Italian Red Velvet Mini Cakes
makes 10 mini cakes

Cake:
125 g // 1 cup all-purpose flour
125 g // 2/3 cup sugar
125 g // 1/2 cup fresh whipping cream
1 tbsp baking powder
3 eggs
3 tbsp cocoa
3 tsp red food color

Frosting:
250 g // 1 cup + 1 tbsp mascarpone
125 g // 1/2 cup fresh whipping cream
2 tbsp sugar

Topping:
handful hazelnuts (chopped finely)

Preheat the oven to 180ºC/350ºF.
Place parchment paper on a rectangular or square baking tray.
In a large bowl beat sugar and eggs (one by one) using an electric mixer. Add fresh whipping cream and continue beating. Then add flour, baking powder and cocoa and beat until smooth. In the end add the red food color. I used 3 tsp but it depends on the type of food color you use so you might need to use a bit more or a bit less. Poor into baking tray and put in the oven. Bake for 15 minutes or until wooden pick inserted in center comes out clean. Cool for 30 minutes.
In the mean time beat the whipping cream until whipped and then add the mascarpone. Continue to beat using an electric mixer until smooth.
Cut out hearts from the cake using a heart shaped cutter. Put a bit of mascarpone cream on top of one layer and add another layer on top. Put again a bit of mascarpone cream on top and sprinkle some hazelnuts on top.
