BLUEBERRY PECAN PORRIDGE

Bad weather has reached Italy…unfortunately! It’s pouring rain since yesterday, non-stop…
So that means a lazy stay at home Sunday.

I woke up half an hour later than usual, at 7.30am. In the end it’s Sunday ánd raining, right?!
Actually I didn’t set the alarm and Samuele woke up at 7.30am 😉 Although that might sound perfect, Samuele isn’t the best sleeper in the world…at 4,5 months he still wakes up a few times at night. If I’m lucky it’s only once, but most of the times twice and if it’s really a bad night even 3 times! The good thing is that when he awakes in the morning, he immediately gives you the biggest and sweetest smile in the world. And yes, it might sound cliché but that makes me forget about my tiredness.

As we were up and running early and obviously haven’t planned anything for today it gave me the possibility to prepare a yummy breakfast. A hot tea, some fresh orange juice and this amazingly good porridge!
When I was a little girl my mom made me porridge every morning. I loved it. For some reason I stopped eating it when getting older. Since a few years I love eating porridge in the morning but I must admit that it takes me too much time in the morning before going to work. Even though in reality it doesn’t really take you thát long to prepare it, when going to work I have only 10 minutes to eat…so grabbing a yoghurt is easier. Terrible because eating porridge has so many benefits. It fills you up way more than other breakfasts, it gives you lasting energy and it also helps keep your blood sugar levels stable. Not to mention it contains calcium, fibre, iron and vitamins B and E and much more. It’s just a really healthy breakfast and extremely delicious!
And the fun part? You can add practically anything you like to make it even more tasty. Think of seeds, fresh fruit and nuts.
Today I’ll share with you a porridge I really love, with pecan nuts and fresh blueberries….Yummy!!
And I’m making myself a promise I will continue to eat it also when starting working again in the end of March…

Blueberry Pecan Porridge
serves 2

500 ml // 2 cups milk
150 g // 1 1/2 cup rolled oats
handful fresh blueberries
handful raisins
handful pecan nuts
2 tsp grated coconut
maple syrup

Place the oats and the milk in a large pan over a medium heat. Bring to a steady simmer for 5 minutes and stir continuously using a wooden spoon until smooth and creamy.
Take off the heat and add blueberries, raisins and pecan nuts. Put a bit of grated coconut on top and drizzle a bit of maple syrup over it.
