For this rainy Sunday a classic Italian recipe…Garlic Roasted Potatoes!
I sort of have a love-hate relationship with potatoes. I love them oven roasted and fried and absolutely hate them boiled. I don’t think I’ve ever eaten them boiled again since I left home 15 years ago…really! I used to eat them when living with my parents but as soon as I cooked myself I just avoided them. I only ate them fried, which I still love but the ones you eat in The Netherlands are simply the best!
Since I live in Italy I eat garlic roasted potatoes pretty often. And like many other classic Italian recipes also this one is simple, with only a few ingredients and full of taste!
I could eat it all year, but normally I skip summer. Not because I don’t like it in summer, but I’m just not too fond of heating the oven while it’s over 30ºC (86ºF) outside 😉 However, today seems more autumn than spring. So while Samuele is taking his morning nap I’m about to prepare once more these yummy garlic roasted potatoes for lunch.
Garlic Roasted Potatoes
4 big potatoes
olive oil extra verging
kosher salt to taste
4 cloves of garlic
Preheat the oven to 180ºC / 350ºF.
Peel the potatoes, wash them under water and cut into small pieces.
Cover a baking dish with parchment paper and place in the potatoes in the baking dish. Add salt, olive oil and fresh rosemary. Toss by hand until the potatoes are well coated. Bake for 60-75 minutes. Flip with a spatula very 20 minutes to ensure even browning.
