Ok I’m seriously having a time issue here. Is it possible that I miss a few hours per day to do all the things I should have done in that day? I used to have little time to do everything I wanted before I had Samuele, but now I just don’t have a clue how to manage everything in those few hours available.
Regarding my blog I totally forgot to share the Zucchini Flan (last week’s post) on Instagram this past week and as I’m writing this post, in the evening, I’m thinking of all the things I still must do before going to bed. And that would be in 15 minutes…help! That means I’m going late to bed which is not a good thing since Samuele still wakes up a few times during the night. And he’s already 7 months old…Hopefully he will sleep an entire night before he turns 1 😉
However, having little time during the day doesn’t mean you can’t eat well. You just need to prepare something easy but delicious! I guess you can understand why I love simple recipes like these mini frittata onion & speck that Luca made me.
Mini Frittata Onion & Speck
makes 8 mini frittata
8 red onions (medium)
12 slices bacon (I used speck Alto Adige)
150 g // 1,5 cup smoked scamorza cheese (grated)
100 g // 1 cup parmesan cheese (grated)
olive oil extra vergine
pepper, salt to taste
Preheat the oven to 180ºC / 350ºF.
Cut the onions in thin slices and wash them in cold water. Heat a bit of olive oil in a skillet over low-medium heat and sauté the onions for 15 minutes.
Let them cool down completely.
In a large bowl combine eggs, smoked scamorza cheese and parmesan cheese using a whisk. Add the onions, a bit of pepper and salt and mix well.
Cover 8 aluminum baking cups with speck (I used 1,5 slice per baking cup). Pour the egg mixture on top.
Bake in oven for 20 minutes. Take out of the oven and let it cool for 10 minutes.
