It’s finally cherry time of year! Cherries have a short season but OMG when it is their season I just love to eat them…a lot!! And yes, I admit, I still search for the twins, feeling like a little girl again.
Last week I had my first cherries of this year and today I spoiled my mom with a FAN.TAS.TIC cherry dessert: No-Bake Cherry Cheesecake. The Italian version it is!
Cherries are her favorite fruit so it wasn’t too difficult to satisfy her.
But this super easy cherry cheesecake was a big hit.
The fact that it doesn’t include baking is absolutely perfect when it’s hot outside. And gosh, these days it’s more summer than spring here in Italy!
So while Samuele was playing outside I had this amazing dessert ready in less than 15 minutes! I say, a winner!
No-Bake Cherry Cheesecake
250 g // 1 1/4 cup mascarpone cheese
150 g // 1 cup fresh cherries
8 biscuits (digestives – finely crushed)
50 g// 1/4 cup butter
handful chocolate chips
1/2 tsp vanilla extract
Slowly melt butter and add biscuits. Make a layer by covering the bottom of the glasses. Put them in the fridge for 5 minutes.
Cut 1/3 of the cherries (pits removed) in small pieces and combine with mascarpone and chocolate chips and make a second layer.
Finish with a layer of fresh cherries (use the remaining 2/3).
