Less than 3 weeks and I will be enjoying the beach life in Southern Italy, Calabria! I’m so looking forward to the sun, the beach and all the good food down South! And of course it will be Samuele’s first summer holiday. First time his little feet will feel the Italian sea and first time he will enjoy the warm sun. His nonno and nonna can’t wait to see him again after 3 months. He’s grown so much in these last 3 months. And, my baby boy is becoming a great eater! He just loves vegetables! Isn’t that amazing. I sure hope it will stay this way…
So a lot of fun things coming soon, but on the other hand I have only 3 weeks to get myself in shape. And even though I eat healthy most of the time, I do enjoy some not-so-healthy food once every now and then! (What would life be without chocolate right?) But ok, 3 weeks isn’t that much so I must avoid chocolate, cakes, cookies and all other no-good-for-my-belly food these days.
These healthy strawberry pancakes are perfect for breakfast on Sunday because besides being healthy they’re just super tasty and delicious! Who wants a cake when you can have these pancakes?!!
Healthy Strawberry Pancakes
makes 6 pancakes
120 g // 1 cup whole grain rye flour
350 ml // 12 fl oz almond milk
200 g // 1 cup fresh strawberries
handful Brazil nuts (or any other type of nuts you like)
maple syrup (optional)
With a wooden spoon mix the flour, egg and milk in a bowl.
Heat a teaspoon of coconut oil in a skillet. Spoon in ¼ cup batter for each pancake. Spread the batter out a little with the back of a spoon. Cook for about 2 minutes. Flip and cook for another minute or until golden brown. Remove from skillet and repeat with remaining batter.
Add some strawberries and Brazil nuts on top and a bit of maple syrup.
