“PAN DI STELLE” ICE TIRAMISÙ

I just got back from Calabria where I was able to enjoy my big boy and my baby boy to the fullest. Working (both) 5 days a week, it’s such a blessing to have quality time with my precious family and see my baby boy enjoying the beach and in the end also the sea. At first he cried when his little feet touched the cold water, but after a few days he loved it so much he didn’t want to get out of the water anymore. How cute! Of course I ate a lot of delicious food but my sister-in-law made a very special dessert that I want to share with you… I planned on sharing it yesterday evening but once I had written everything my internet shut down and didn’t save any of it. I was so enjoyed by it that I didn’t want to rewrite it all… Tonight a second chance, hoping it will go right 😉

Pan di Stelle Ice Tiramisù
serves 6

250 g // 1 cup fresh whipping cream
24 Pan di Stelle cookies (or any other chocolate cookies)
espresso coffee (for 6 persons)
2 tsp sugar
cocoa powder

Brew coffee and let it cool down completely.
Beat whipping cream with sugar added.
Make a first layer of whipped cream in a small oven dish. Dunk the cookies in the coffee and make a second layer. Continue with a layer of whipped cream and then cookies until you have finished the cookies.
Sprinkle some cocoa powder on top.
Freeze for 2 hours.
