PIEDMONTESE FRITTO MISTO

Today a specialty from the region Piedmont where I live. Fritto Misto Piemontese! You might know the ‘normal’ Fritto Misto which is a mix of deep fried seafood…delicious by the way!! The Piedmontese way is not with seafood but with all kinds of vegetables. Also very tasty!
The fun part is that this should be an appetizer that everybody will love because you just choose your favorite veggies! I made mine with my 3 favorite ones…

Piedmontese Fritto Misto

2 red bell pepper
1 zucchini
1 eggplant
3 eggs
200 g // 1 2/3 cup all purpose flour
200 g // 1 1/2 cup breadcrumbs
sunflower oil
salt

Heat sunflower oil in a frying pan.
Cut the veggies in thin long strips.
Heat a large pan with water and a bit of salt and boil the veggies for 3 minutes.
Beat the eggs and put them in a deep plate. Put also the flour in a deep plate and the breadcrumbs.
Dip them in the flour, then in the eggs and last in the breadcrumbs. Add flour or breadcrumbs if you see that it’s not enough.
Deep fry them for 2/3 minutes and drain on kitchen paper.
Sprinkle some salt on top and serve warm or cold!
