Over 6 months ago I posted my last recipe…where has time been? I have been so busy that I just didn’t find time to share some delicious Italian recipes with you. So sorry for that! Nonetheless, so many of you have liked my FB page…soon I’m hitting 1000 likes and I’m pretty proud of that!!
Since the end of summer last year I have changed jobs. I no longer work in Italy but found a nice job in Switzerland!! And although it sounds strange, it only takes me 1 hour drive to get there instead of hours and hours by train to my previous job. It’s been a big change…working 42 hours a week + 10 hours of commuting I have no time left during the week than playing with my son, house hold and of course cooking. But the months have passed by so quick that I’ve said many times to myself…next week I start photographing again so I can share some fabulous recipes on my blog again. And before I knew we just started spring! And as I totally love spring I really decided to start blogging again.
No longer every week, but 2 times a month.
And today I’m starting off with one hell of a yummy and fresh spring salad: Homemade Mackerel Salad. Just perfect on toast or a sandwich! You just got your lunch idea 🙂
Homemade Mackerel Salad
2 cans of Mackerel
3 tbsp mayonnaise
5 black olives
1/2 small red onion
3 small sweet orange bell peppers
handful chopped parsley
Cut the olives, onion, bell peppers in tiny pieces and mix it with mackerel mayonnaise and parsley until smooth.
Yep, it’s as easy as that!
